I cover dialogs in The Busy Coder’s Guide to Android Development. This includes creating dialogs with a custom layout.

There used to be a ProgressDialog in the Android SDK. This has been deprecated. Nowadays, if you want to create a dialog that shows progress, you just create a dialog that happens to do something to show progress. Whether you use a ProgressBar, an ImageView with a drawable (e.g., LevelListDrawable), or something else is up to you.
